Offer Culinary Journey

MELBOURNE, FLA. — Florida Institute of Technology’s popular International Dining Series starts its third season Sept. 22 with the foods of the Caribbean.

Launched in 2014 by the university’s Campus Dining Services Director Tom Stewart and Chef de Cuisine Jon Skoviera, the series held at Panther Dining Hall features monthly buffet-style dinners offering authentic foods from different regions and countries.

Florida Tech students and staff from the areas featured in the series are asked for input on the menus and to sample the dishes to ensure they are authentic and accurately reflect the native cuisine.

“Our amazing diversity is one of our strengths at Florida Tech,” Tom Stewart said. “We help develop students who are truly global citizens, and exposing them – and the general public – to the culinary side of our international experience is a valuable and enjoyable part of what we do.”

After the Caribbean menu Sept. 22, which included such items as Jamaican curry goat, Caribbean oxtail stew, and pineapple-rum upside down cake, there will be monthly international dinners through March, and then an international Mother’s Day brunch in May to conclude the dining series.

Next up: Foods of the Middle East on Oct. 27.

Here are additional upcoming dates and countries:

  • Nov. 30, India
  • Jan. 12, China
  • Feb. 9, Africa
  • March 23, Latin America and South America
  • May 8, Mother’s Day Brunch Around the World

All the dinners are on Thursdays except for China on a Wednesday and the Mother’s Day brunch on a Sunday.

In addition to the foods, there will be related educational materials posted in the dining hall and, at some meals, entertainment from the country or region that developed the cuisine.

All dinners will be served from 5:30-8:30 p.m. Cost is $16, tax included, per person for the all-you-care-to-eat meal. Student, faculty and staff meal plans and special campus gift cards are accepted.

Panther Dining Hall, 3113 Panther Place, is just south of the Clemente Center on the Florida Tech campus in Melbourne. Visitor parking is free on the first floor of the parking garage behind the dining hall.
